Coconut Chicken Wings



Ingredients


  • 3 tablespoons vegetable or light olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 teaspoon mild curry powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper 
  • 1/2 teaspoon grated lemon zest
  • 1 cup coconut milk 
  • 3 pounds chicken wings
  • 1 cup flaked sweetened coconut


Instructions
  • In a large bowl, whisk together the first seven ingredients, then whisk in the coconut milk. Reserve and refrigerate 1/2 cup of the mixture divided evenly in two containers.
  • Cut off the tips of the wings (reserve them for stock or discard), then halve the wings at the joint. Place them in the bowl and toss them with the marinade. Cover the bowl with plastic wrap and refrigerate it for at least an hour, but preferably overnight.
  • Just before grilling the wings, toast the coconut in a medium-size skillet over medium heat, stirring constantly until golden brown, about 10 minutes. Pour the flakes onto a plate and allow them to cool, then lightly crumble the flakes with your fingers and set them aside.
  • Prepare the grill for cooking and oil the grates. Grill the wings 8 to 10 minutes per side, turning once, or until the meat is no longer pink inside. Use one container of the reserved marinade to baste the meat at each turn.
  • As the wings finish cooking, warm the other container of reserved marinade in a small saucepan until heated through.
  • Transfer the cooked wings to a platter and coat them with the warmed marinade. Sprinkle the wings with the toasted coconut and serve them immediately. Serves 6 as a main dish or 12 as an appetizer.

Ingredients

  • Bananas
  • Watermelon balls
  • berries
  • Whipped Cream
  • chopped nuts (optional)
  • Granola (optional)
Instructions
  1. Cut bananas in half lengthwise and place the halves on plates.
  2. Top with watermelon balls formed with an ice-cream scoop.
  3. Add dollops of whipped dream, then sprinkle on berries and chopped nuts or granola.

Apple Vinaigrette (Animal Kingdom)

Yield: 10 servings

Ingredients:2 each Apple, puree
1 Tablespoon Dijon Mustard
1/3 cup Cider Vinegar
½ cup Lemon Juice, fresh squeezed
2 cups Olive Oil
1 ½ each Lemon Zest, fresh
To taste Kosher Salt
To taste Fresh Ground Black Pepper
Method of Preparation: 
1. Peel and shred about two apples through the mandoline and put in a stainless steel bowl with the Dijon Mustard.
2. Whisk in the cider vinegar and the lemon juice, and slowly add in the olive oil.
3. Stir in the fresh grated lemon zests and mix well.
4. Adjust the seasonings with Kosher salt and fresh ground black pepper.

Apple and Jicama Salad




Yield: 8 servings
INGREDIENTS
4 Apples
3 tablespoons Olive Oil
Salt and Pepper to taste
1 Jicama, peeled and julienned
1/2 cup Red Onions, diced
1/2 cup Radish Slices
4 cups Spinach or Mixed Greens, washed and spun

Port and Yogurt Dressing
2 ounces Port Wine
8 ounces Yogurt

Method
1. Wash apples. Cut in half and remove seeds. Cut all halves into slices. Place in a mixing bowl and drizzle with olive oil and salt and pepper.
2. Place apples on a grill on low heat to caramelize and impart some of the smoky flavor. Chill grilled apples and set aside.
3. Wash and peel the jicama. Cut into slices, then julienne. Place in a large mixing bowl.
4. Add the red onions, radish slices, and spinach. Remove the apples from the refrigerator and cut into large dice. Place in bowl.
5. To make the dressing, place the yogurt in a bowl and add the port wine. Mix well.
6. Take the yogurt dressing and add to the bowl. Add salt and pepper to taste. Mix and serve.
Note: Peaches may be substituted for apples.

African Stew




Yield: 16 servings
Ingredients
4 cups water
3 each chicken bouillon cubes
1/3 cup curry paste (or can be dry curry)
2 Tablespoons ground coriander, toasted
2 Tablespoons granulated garlic
4 cups coconut milk
¼ cup sugar
3 Tablespoons soy sauce
2 pounds beef/pork/chicken, large diced
2 cups mixed red and green peppers, diced
2 cups onions, diced
½ cup whole kernel corn, frozen
1 bay leaf
¼ teaspoon cayenne pepper
2 Tablespoons cornstarch (make slurry)
Method:
1. In kettle, heat water, chicken bouillon cubes, curry paste, ground coriander, and granulated garlic. Let boil and add in sugar and coconut milk.
2. Add in the soy sauce and the diced meat. Let simmer for 20 minutes.
3. Add vegetables, spices, and cook until tender.
4. Bring to a boil and add cornstarch slurry slowly to the mixture and whisk until thickened.

African Smoothie



Yields: 10 servings

Ingredients:
1 pint non-fat plain yogurt
8 ounces lemonade juice concentrate
4 ounces pineapple jice concentrate
4 ounces mango frozen beverage mix
1 ounce banana daiquiri mix
2 quarts water

Makes: 10 portions

Ingredients:
1 pineapple, peeled and diced
2 green apples, peeled and diced
1 mango, peeled and diced
1 papaya, small, peeled and diced
1 pound red seedless grapes, stamped
5 bananas, peeled and sliced
1 bottle sweetened shredded coconut
1.2 ounce vanilla extract
1 pound sweetened condensed milk
1 cup heavy cream

Method:
Combine all diced fruits. Mix vanilla and sweetened condensed milk. Whip heavy cream until stiff peaks form, then blend into above ingredients.
Refrigerate and serve cold.

I personally have not tried any of the recipes because I don't live in Florida but those that I know in Florida rave about the food at the parks. Info:They have a wide variety of Hot Dogs. The hot dogs that they use are straight from New Jersey. Fab's has a no hold bards on their creativity of the dogs. Make sure you like their Facebook page because they will post various items that are not on their menu in the restaurant.

Types of Sandwiches: House Cured Pastrami, Oinkster Pastrami, BBQ Pulled Pork Sandwich and others
Info: They are located in a old wienerschnitzel building it doesn't look like much. But they truly know how to make pastrami and pulled pork sandwiches. If you want true authentic pastrami and pulled pork sandwiches this is the best place to go.
