Ingredients:
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon white sugar
1/4 cup onion, diced
1 cup sour cream
3 (14.5 ounce) cans French style green beans, drained
2 cups shredded cheddar cheese
1/2 cup crumbled buttery round crackers
1 tablespoon butter, melted.
Directions:
1. Preheat oven to 350 degrees F (175 degrees C)
2. Melt 2 tablespoons butter in a large skillet over medium heat. Stir in flour until smooth, and cook for one minute. Stir in the salt, sugar, onion, and sour cream. Add green beans, and stir to coat.
3. Transfer the mixture to a 2 1/2 quart casserole dish. Spread shredded cheese over the top. In a small bowl, toss together cracker crumbs and remaining butter, and sprinkle over the cheese.
4. Bake for 30 minutes in the preheated oven, or until the top is golden and cheese is bubble.

Pumpkin Cheese Pie
Ingredients:
1 (8ounce) package cream cheese
2 cups pumpkin puree
14 ounces sweetened condensed milk
3 eggs
1 teaspoon pumpkin pie spice
1 recipe pastry for a 9 inch single crust pie
Directions:
1. preheat oven to 350 degress F (175 degrees C)
2. Mix cream cheese and condensed milk together until smooth. Stir in the pureed pumpkin, pumpkin pie spice and eggs. Mix until well combined. Pour batter into the pie shell
3. Bake at 350 degrees F (175 degrees C) for 45 minutes or until a knife inserted 1 inch from the edge comes out clean. Serve warm.

Apple and Onion Salad Endive Spears

Ingredients:
- 1/2 cup walnut pieces, minced
- 2 Granny Smith apples - peeled, cored, and minced
- 1 large sweet onion, minced
- 1/4 cup chopped fresh chives
- 1/4 cup chopped fresh parsley
- 1/4 cup raw apple cider vinegar (such as Bragg®)
- 3/4 cup extra-virgin olive oil
- 1/4 cup crumbled blue cheese
- 6 Belgian endives, separated into individual leaves
Directions
- Toast walnut pieces in a dry skillet over medium-high heat until aromatic and lightly browned, 3 to 5 minutes. Let cool to room temperature.
- Combine apples, onion, chives, and parsley in a bowl and toss well.
- Pour vinegar into a small bowl; drizzle and whisk olive oil into vinegar until emulsified. Pour dressing into apple mixture and toss to coat.
- Gently fold walnuts and blue cheese into apple mixture just before serving. Spoon filling onto each endive leaf.
